There’s just something so special about the combination of honey, mustard and tender, juicy grilled chicken thighs. The sharp, mild heat of mustard balanced by the sweetness of honey calls to us all the time. Tonight, we’re using their mouth-watering powers in the form of a honey mustard marinade for grilled chicken that we’ll also use some of as a dressing for a summery peach salad to serve on the side. Summer dinners do not get better than this, friends! The Best Honey Mustard Marinade Ingredients
Honey. Fancy honey is not necessary here! Honey can be pricey, so feel free to use a really basic, neutral-tasting honey.
Whole grain mustard. Whole grain mustard is rustic and delicious, and we just love the satisfying slight crunch that the whole mustard seeds add to our honey-mustard marinade.
Extra virgin olive oil. You could use regular olive oil instead of extra virgin, if you want, but we like to use the more-flavorful extra virgin here because some of the marinade will double as a dressing for the peach salad.
Fresh lemon juice.
Cilantro. If you’re a cilantro hater, it’s OK to skip it (but we love the herbal freshness it adds).
Fresh garlic.
Curry powder. Just regular yellow curry powder is all you need here — nothing fancy.
How To Make Grilled Honey Mustard Chicken
Marinate the chicken thighs. Whisk together the honey mustard chicken marinade and nestle those chicken thighs into it. Pop them in the fridge for at least 30 minutes, but up to 4 hours. Don’t let them sit longer than that, though, or the chicken might start to break down.
You could make the salad while the chicken marinates. You’ll dress cucumbers, peaches, cilantro, and mint with the honey mustard marinade — the bit you reserved that you didn’t mix with the chicken thighs.
Grill that chicken! Get a nice char on those lovely marinated chicken thighs. They’re done when their internal temperature reaches 165°F, measured on an instant-read thermometer.

What To Serve With Honey Mustard Chicken
If you want a light summer supper, simply serve this grilled honey mustard chicken recipe as-is. After all, it’s got a peach salad built in. Got leftovers? Everything will keep in the fridge for 1-2 days. We don’t recommend freezing either the honey mustard chicken or the peach salad!
