This compilation of “stay-in” dinners is our first ever round up entirely composed of The Modern Proper recipes! In light of that, do you think we’re officially allowed to call ourselves the “no need to look anywhere else weeknight dinner blog”?

We need to start off by letting you know that there are NO soups in this round-up. Yes, it’s true—as soon as the leaves turn, thoughts of soup nights begin to swirl in our heads. BUT, we’ve shared so many soup recipes over the years, that we actually have all of our soup recipes in one place—a 30 Best Soup Recipes post for all of our favorite soup recipes in one convenient place!

Enough about soup. This fall recipe round-up is full of hearty, family-friendly dinners to get you through the chilly months. Let’s start with that trusty old Crock-Pot.

    Ingredients

    • 4 small honeynut squash, halved lengthwise, seeds removed (about 2-3 pounds)
    • 6 tablespoons salted butter, softened
    • 2 tablespoons brown sugar
    • ¾ teaspoon sea salt, plus more to taste
    • ¼ teaspoon cinnamon
    • Pinch of cayenne, (optional)
    • ¼ cup finely chopped pecans or pepitas
    • Freshly cracked black pepper, for serving

    Method

    1. Preheat the oven to 425°F with a rack in the center position. 

    2. Place the squash halves cut sides up on a rimmed sheet pan. Evenly spread the butter on the cut side of each squash. 

    3. In a small bowl, combine the sugar, salt, cinnamon, and cayenne (if using). Sprinkle the spice mixture evenly over the buttered squash.

    4. Roast for 25 minutes. Remove from the oven, leaving the oven on. Carefully sprinkle the squash with pecans, then return to the oven until fork-tender and browned, 15 minutes more. 

    5. Transfer to a serving platter or divide among 8 plates. Sprinkle with salt and pepper before serving.

      Wait, the picture looks like grits, but it says it’s polenta... what is the difference?

      There's not a huge difference. Grits are lighter in color.

      The Pot Braised Kale with Crispy Chicken is really good, but definitely needs to be served with mashed potatoes or rice because the kale ends being salty, so the potatoes balance it out perfectly.
