Rustic Lamb Pie is Hearty and Homey and Perfect for the Season.
Last week, Natalie and I had the opportunity to gather a few of our friends and family around a table full of beautiful, autumnal dishes. There were seasonal cheese boards and a variety of fresh apple pies, but by far the star of the dinner was this rustic lamb pie. The ground lamb we used from American Lamb was incorporated into the perfect mixture of curried vegetables for a dish that perfectly encapsulates the fall flavors we love.
It was a dish we had never made before and can’t wait to make again, because it showcased just how fun, flavorful and versatile lamb can be. We are so excited to be sharing this recipe for an easy lamb pie. If you’ve been following along with us for a while, you might remember that a few years (almost 5!) ago we also created a recipe for a lamb pie with a mashed potato topping wrapped in puff pastry!
While BOTH recipes are delicious, the former takes a lot longer to make. For this recipe, all you have to do is cook the ingredients in a large cast iron pan on the stove top, then add the slurry to thicken it up. After that you simply place a sheet of puff pastry over the top of the pan and bake it in the oven until golden brown. …and just like that you have the perfect rustic lamb pie!
Another thing that makes this lamb pie stand out is the addition of curry powder. If you have never tasted curry and lamb together, you are in for a treat. It is a delicious ingredient combination that has a big flavor profile.
What to Serve With Lamb Pie?
The menu for this autumn-themed dinner was impeccable. We served all things fall while we watched the leaves literally dance around us in the presence of a roaring fire. What could be better?
