Last week, Natalie and I had the opportunity to gather a few of our friends and family around a table full of beautiful autumnal dishes. There were seasonal cheese boards and a variety of fresh apple pies, but by far the star of the dinner was this Rustic Lamb Pie. The ground lamb we used from American Lamb was incorporated into the perfect mixture of curried seasoning and savory vegetables for a dish that perfectly encapsulates everything we love about fall.

This rustic lamb pie was a dish we had never made before and can’t wait to make again, because it showcased just how fun, flavorful and versatile lamb can be.

TMP Simple and Delicious Lamb Pie:

We are so excited to be sharing this recipe for an easy lamb pie. If you’ve been following along with us for a while, you might remember that a few years (almost 5!) ago we also created a recipe for a lamb pie with a mashed potato topping wrapped in puff pastry!

While BOTH of our lamb pie recipes are delicious, the former takes a lot longer to make. For this recipe, all you have to do is cook the ingredients in a large cast iron pan on the stove top, then add the slurry to thicken it up. After that you simply place a sheet of puff pastry over the top of the pan and bake it in the oven until golden brown.

…and just like that you have the perfect rustic lamb pie!

Another thing that makes this lamb pie stand out is the addition of curry powder. If you have never tasted curry and lamb together, you are in for a treat. It is a delicious ingredient combination that has a big flavor profile.

What to serve with lamb pie?

The menu for this autumn-themed dinner was impeccable. We served all things fall while we watched the leaves literally dance around us in the presence of a roaring fire. What could be better?

Rustic Lamb Pie

  • Serves: 8


  • 2 lbs American lamb, ground
  • 2 tbsp Olive oil
  • 2 Celery ribs, finely diced
  • 2 Carrots, finely diced
  • 3 cups Leeks, cut into thin rings (4 small leeks or sub out for 1 large onion)
  • 4 Cloves garlic, minced
  • 3 Russet potatoes, peeled and diced into ½” pieces
  • 3 Cups beef stock
  • 1 Cup peas
  • 1 tbsp Curry powder
  • 2 tsp Salt
  • ½ cup Water
  • ¼ cup Corn starch
  • 1 Sheet puff pastry
  • 1 Egg, whisked


  1. Heat oven to 400°F.
  2. In a large cast iron skillet heat 1 tablespoon olive oil over medium heat.
  3. Add ground lamb to the skillet and cook until browned, breaking it up with a wood spoon as it cooks. Remove from skillet and set aside.
  4. Using the same skillet heat remaining olive oil. Add in celery, carrots and leeks. Cook until vegetables start to soften, stirring often. Add in garlic and continue cooking for 1 more minute. Add cooked lamb, potatoes, beef stock, curry and salt and stir until all ingredients are combine.
  5. Bring mixture to a simmer and cook until potatoes are tender. Add in peas and cook for another minute.
  6. In a small bowl whisk together cornstarch and water until a murky liquid is achieved. This is your slurry. Add it to the prepared lamb mixture and stir over medium low heat until everything thickens. About 5 minutes. Remove from heat.
  7. On a well flowered cutting board roll out puff pastry until it’s large enough to cover the skillet. Set pastry over the skillet pressing it down on edges. Give the pastry 3 or 4 slits in the top with a sharp knife. Using a pastry brush, brush the top of the pastry with the egg.
  8. Set prepared pie on a large rimmed baking sheet and place in center of the oven. Bake for 20 minutes, or until pastry is golden brown. Serve warm.
