Rustic Lamb Pie is Hearty and Homey and Perfect for the Season.

Last week, Natalie and I had the opportunity to gather a few of our friends and family around a table full of beautiful, autumnal dishes. There were seasonal cheese boards and a variety of fresh apple pies, but by far the star of the dinner was this rustic lamb pie. The ground lamb we used from American Lamb was incorporated into the perfect mixture of curried vegetables for a dish that perfectly encapsulates the fall flavors we love.

It was a dish we had never made before and can’t wait to make again, because it showcased just how fun, flavorful and versatile lamb can be. If you aren’t super familiar with using lamb in your cooking, I’m excited to share with you what flavors go with lamb and what to serve with this amazing lamb pie recipe, but first I’d love to tell you a little bit more about why we chose American Lamb in the first place.

TMP Simple and Delicious Lamb Pie:

We are so excited to be sharing this recipe for an easy lamb pie. If you’ve been following along with us for a while, you might remember that a few years (almost 5!) ago we also created a recipe for a lamb pie with a mashed potato topping wrapped in puff pastry!

While BOTH recipes are delicious, the former takes a lot longer to make. For this recipe, all you have to do is cook the ingredients in a large cast iron pan on the stove top, then add the slurry to thicken it up. After that you simply place a sheet of puff pastry over the top of the pan and bake it in the oven until golden brown. …and just like that you have the perfect rustic lamb pie!

Another thing that makes this lamb pie stand out is the addition of curry powder. If you have never tasted curry and lamb together, you are in for a treat. It is a delicious ingredient combination that has a big flavor profile.

The menu for this autumn-themed dinner was impeccable. We served all things fall while we watched the leaves literally dance around us in the presence of a roaring fire. What could be better?

Rustic Lamb Pie Recipe

Ingredients

  • 2 tablespoons extra-virgin olive oil
  • 2 pounds ground lamb
  • 2 celery ribs, diced
  • 2 medium carrots, peeled, diced
  • 3 large leeks, trimmed and thinly sliced (about 3 cups)
  • 4 garlic cloves, minced
  • 3 medium russet potatoes, peeled and diced into ½-inch pieces
  • 3 cups beef stock
  • 1 tablespoon yellow curry powder
  • 2 teaspoons kosher salt
  • 1 cup frozen peas
  • ¼ cup corn starch
  • ½ cup cool water
  • 1 large egg, beaten
  • 1 sheet puff pastry, thawed at room temperature

Method

  1. Preheat the oven to 400°F with a rack in the center position.

  2. In a large cast iron skillet, heat 1 tablespoon of the olive oil over medium heat. Add the lamb and cook, breaking it up with a wooden spoon, until browned, about 6 minutes. Transfer the cooked lamb to a plate. 

  3. To the same skillet, add the remaining 1 tablespoon of olive oil. Once the oil is glistening, add the celery, carrots, and leeks. Cook, stirring often, until the vegetables start to soften, about 5 minutes. Stir in the garlic and cook until fragrant, about 1 minute more.

  4. Add the cooked lamb, potatoes, beef stock, curry powder, and salt and stir until combined. Bring to a boil over high heat. Reduce the heat to medium-low and simmer, stirring occasionally, until potatoes are tender, about 6 minutes. Stir in the peas and cook for another minute.

  5. In a small bowl whisk together the cornstarch and water. Add the cornstarch slurry to the lamb mixture and cook, stirring, until thickened, about 5 minutes. Remove the skillet from heat. 

  6. Brush the rim of the skillet with a thin layer of the beaten egg. Alternatively (if you aren’t working with an ovenproof skillet), transfer the lamb mixture to a deep-dish pie pan or 2-quart baking dish.

  7. Roll out the thawed puff pastry and place it on top of the skillet or baking dish, covering the meat mixture completely, press the puff pastry to adhere it to the edges of the skillet. Trim any excess pastry. Using a sharp knife, make a few slits on the top to create vents. Brush the puff pastry all over with the whisked egg.

  8. Transfer the pie to the oven and cook until the pastry is golden brown and no longer doughy, 20-30 minutes. If the pastry begins to brown too much, cover it with foil. Remove the pie from the oven and let it stand for 5 to 10 minutes before scooping and serving.

    I dont understand how Id transfer the pie to the baking sheet for the last step?

    The dish the pie is in you will place that on top of the baking sheet and then put the whole thing (sheet and pie pan) in the oven. Hope you enjoy!

    Wonderful pie! Made it with a regular crust and cooked it up with lamb from our farm. Even the folks who said they don’t like lamb enjoyed it! Helps that we have hair lamb not wool too. But anyway, delicious.

I had 1 pound of ground lamb left in the freezer, until I get my next half lamb order (Canadian grass fed raised locally) and needed to make something different.
