Rustic Lamb Pie is Hearty and Homey and Perfect for the Season.

Last week, Natalie and I had the opportunity to gather a few of our friends and family around a table full of beautiful, autumnal dishes. There were seasonal cheese boards and a variety of fresh apple pies, but by far the star of the dinner was this rustic lamb pie. The ground lamb we used from American Lamb was incorporated into the perfect mixture of curried vegetables for a dish that perfectly encapsulates the fall flavors we love.

It was a dish we had never made before and can’t wait to make again, because it showcased just how fun, flavorful and versatile lamb can be. If you aren’t super familiar with using lamb in your cooking, I’m excited to share with you what flavors go with lamb and what to serve with this amazing lamb pie recipe, but first I’d love to tell you a little bit more about why we chose American Lamb in the first place.

Why Choose American Lamb?

You may be wondering why we used American Lamb for this rustic lamb pie as opposed to just grabbing another ground lamb at the grocery store. While it’s not always convenient to source the very best meat, we feel like now, more than ever, it’s really important. Cooking with high-quality meat really makes a difference for the health of our families, as well as the planet and it’s something we are committed to.

American Lamb 101:

  • American Lamb farmers and ranchers are committed to practices that protect the environment, improve land management and foster animal well-being.
  • American Lamb is a flavorful, nutrient-rich food and an excellent source of Vitamin B12, niacin, zinc and selenium.
  • Lamb is produced in every state in the country so fresh, local lamb is available year-round.

What Flavors Go With Lamb?

Now that you know why we love cooking with lamb, let’s explore what flavors it pairs well with (and some of them may surprise you!). Because lamb is eaten around the world, you will find that there are a wide range of herbs and spices that pair well with the meat, making for endless meal options.

Herbs:

  • Basil
  • Marjoram
  • Mint
  • Oregano
  • Rosemary
  • Sage
  • Thyme
  • Cilantro

Spices:

  • Cinnamon
  • Cumin
  • Curry Powder
  • Paprika
  • Turmeric
  • Curry

A few other things that go well with lamb are garlic, Garam Masala, ginger, honey, Balsamic vinegar, pistachios, Dijon mustard and pomegranates. Yum!

TMP Simple and Delicious Lamb Pie:

We are so excited to be sharing this recipe for an easy lamb pie. If you’ve been following along with us for a while, you might remember that a few years (almost 5!) ago we also created a recipe for a lamb pie with a mashed potato topping wrapped in puff pastry!

While BOTH recipes are delicious, the former takes a lot longer to make. For this recipe, all you have to do is cook the ingredients in a large cast iron pan on the stove top, then add the slurry to thicken it up. After that you simply place a sheet of puff pastry over the top of the pan and bake it in the oven until golden brown. …and just like that you have the perfect rustic lamb pie!

Another thing that makes this lamb pie stand out is the addition of curry powder. If you have never tasted curry and lamb together, you are in for a treat. It is a delicious ingredient combination that has a big flavor profile.

What to Serve With Lamb Pie?

The menu for this autumn-themed dinner was impeccable. We served all things fall while we watched the leaves literally dance around us in the presence of a roaring fire. What could be better?

  • Apple pie with a cheddar cheese crust
  • Cheese boards with all the fixings
  • Rustic bread with butter and salt
  • Hearty kale salad (specifically this Apple Kale Salad minus the chicken and swapping pecans for the pumpkin seeds).

Ingredients

  • 2 lbs American Lamb, ground
  • 2 tbsp olive oil
  • 2 celery ribs, finely diced
  • 2 carrots, finely diced
  • 3 cups leeks, cut into thin rings (4 small leeks or sub out for 1 large onion)
  • 4 cloves garlic, minced
  • 3 russet potatoes, peeled and diced into ½” pieces
  • 3 cups beef stock
  • 1 cup peas
  • 1 tbsp curry powder
  • 2 tsp salt
  • ½ cup water
  • ¼ cup corn starch
  • 1 sheet puff pastry
  • 1 egg, whisked

Method

  1. Heat oven to 400°F.
  2. In a large cast iron skillet heat 1 tablespoon olive oil over medium heat.
  3. Add ground lamb to the skillet and cook until browned, breaking it up with a wood spoon as it cooks, about 6 minutes. Remove from skillet and set aside.
  4. Using the same skillet heat remaining olive oil. Add in celery, carrots and leeks. Cook until vegetables start to soften, stirring often. Add in garlic and continue cooking for 1 more minute. Add cooked lamb, potatoes, beef stock, curry and salt and stir until all ingredients are combine.
  5. Bring mixture to a simmer and cook until potatoes are tender. Add in peas and cook for another minute.
  6. In a small bowl whisk together cornstarch and water until a murky liquid is achieved. This is your slurry. Add it to the prepared lamb mixture and stir over medium low heat until everything thickens. About 5 minutes. Remove from heat.
  7. On a well flowered cutting board roll out puff pastry until it’s large enough to cover the skillet. Set pastry over the skillet pressing it down on edges. Give the pastry 3 or 4 slits in the top with a sharp knife. Using a pastry brush, brush the top of the pastry with the egg.
  8. Set prepared pie on a large rimmed baking sheet and place in center of the oven. Bake for 20 minutes, or until pastry is golden brown. Serve warm.

can i cook pie filling on hob and then transfer it to a suitable oven proof dish for baking

    Yes, that will work fine!

  • Leah

Wonderful pie! Made it with a regular crust and cooked it up with lamb from our farm. Even the folks who said they don’t like lamb enjoyed it! Helps that we have hair lamb not wool too. But anyway, delicious.

Thanks Leah, we are so happy you love it!

  • Marion

This is a fabulous recipe, thank you so much for sharing! I had 1 pound of ground lamb left in the freezer, until I get my next half lamb order (Canadian grass fed raised locally) and needed to make something different. I saw curry and puff pastry and said I'm in! It turned out fabulous, and will definitely be making this again.

Thanks Marion, we are so happy you loved it!
