A few blog posts back, Natalie shared that the one food item neither of us could live without is the egg. Oh, the glorious egg. The yolk most certainly holds our hearts. It makes every breakfast more beautiful with its bright, sunny color, and smooth, rich texture. Whatever you call it (liquid gold, nature’s sauce, I'm sure there's some other clever ones out there) it's hard to argue that the yolk is the star of the show when it comes to eggs. But let's not forget about the humble white. While not as full in flavor or intensity, the miracle working egg white can do amazing things in your kitchen (with a little effort on your part, of course). It's the key ingredient in meringue, marshmallow, so many great cocktails, and let's not forget my personal favorite: homemade mayonnaise and aioli.

There's few things I love more than a from-scratch mayo or aioli, bursting with fresh flavor,  to use as a dip or in sauces and dressings. But, if I’m being honest, as a busy mom I don't get around to whipping up these from-scratch batches of mayo all that often any more. It's just not at the top of my long list of to-do’s. When I do take a mayo shortcut and use store bought (which is more often than not these days) I'm usually disappointed with the results. However, recently Natalie and I discovered Best Foods new line of organic mayonnaise. While the line includes Roasted Garlic and their other beautifully balanced original flavors (which are all great in their own way) our favorite by far has been the Organic Spicy Chipotle. So. Dang. Good. We've partnered with our pals at The Feed Feed to come up with lots of new and fantastic ways to use this great spread in our everyday lives. Not only is this new Best Foods line organic (so we can feel great about using it), but it's flavor is as close as you can get to being scratch-made, and because of that it makes preparing some of our favorite dishes that much simpler, without feeling like our short-cuts result in sacrificing flavor.

In this Sante Fe Style Cob, we’ve put a southwest spin on the salad using our new favorite Best Foods Organic Spicy Chipotle Mayonnaise in the dressing, as well as to marinate the chicken before throwing it on the grill. Using mayo as a marinade for chicken yields delicious, juicy, tender meat, and if you've yet to try this method we highly recommend it. We pair that flavor-packed chicken with crisp lettuce, corn, black beans, and avocado, as well as some traditional cobb salad favorites; bacon, cheese, tomatoes, and hard boiled egg. It's a simple meal, full of texture and contrast, all at once fresh and hearty and requires minimal cook time... also known as the ‘perfect summer meal for any occasion.’ If you need me, I'll just be in my yard eating this for the next 3 months. I'm not willing to share, so you should make your own. You'll be glad you did.

Southwest Style Cobb Salad with Smoky Chipotle Dressing

Serves 4

Smoky Chipotle Dressing

1/2 cup Best Foods Organic Spicy Chipotle Dressing
1/4 cup olive oil
1/4 cup fresh chopped cilantro
1/3 cup fresh squeezed lime juice
1/4 tsp freshly ground pepper
1/2 tsp smoked paprika
1/2 tsp cumin
1 tsp honey (optional)

Southwest Style Cobb Salad

2 lbs chicken breast
1 cup Best Foods Organic Spicy Chipotle Mayonnaise
8 cups romaine lettuce, roughly chopped
4 pieces thick cut bacon, cooked and chopped
1 cup cherry tomatoes, halved
1 cup corn
1 ripe avocado, thinly sliced
1/2 cup black beans, rinsed
1 cup pepper jack cheese, cubed
1/4 cup fresh cilantro, roughly chopped
1/2 cup green onions, roughly chopped
4 eggs, hard boiled

Method

  1. In a small bowl add all ingredients for the salad dressing, whisk with a fork until smooth and set aside. (Can be stored in an airtight container for up to a week in the refrigerator.)
  2. Heat grill on high for 10 minutes. Prepare chicken breasts by trimming excess fat and patting dry completely. Dredge the chicken in Best Foods Organic Spicy Chipotle Mayonnaise until completely coated. Generously season with freshly ground pepper and place on hot grill. Reduce heat to low and cook without turning for 5-8 minutes. Flip chicken and continue cooking, rotating frequently, until cooked through. Remove from grill and set aside.
  3. To assemble the salad, simply layer all ingredients starting with the romaine lettuce. Thinly sliced the chicken breasts and lay on top. Add dressing to the salad or serve on the side and enjoy!
