In the midst of some serious deep cleaning, we’ve realized there are a few areas of our homes that need more than a little attending to. More accurately, a complete overhaul. You know what we’re talking about. Those places you keep lots of stuff, but they have doors on them to cover their unruly state when people come over. The doors you pray to God no one opens. Yes, you know what we are talking about: our cupboards.

Along with some rolled oats, oil and honey we made the most delicious granola.

We took this opportunity to not only clean out or pantries, but to make something yummy in the mean time. Something that would sustain our souls and families for the next few mornings. We unburied and dug out some dried fruits, nuts of all varieties and coconut flakes and knew what must be done. Along with some rolled oats, oil and honey we made the most delicious granola. And the best part about this recipe is there are hundreds of different combinations of nuts and dried fruits you can use. You can never get bored of making granola as long as you’re a pantry hoarder like us.

Granola with Figs, Almonds and Coconut

Serves 8

Ingredients

4 cup old fashioned oats
2-2 1/2 cups sliced almonds (or any other kind of nuts)
1 1/2 cups coconut flakes (sweetened or unsweetened, depending on how sweet you like your granola)
1/4 tsp salt
1/2 cup honey
1/2 cup canola oil (or coconut oil)
1 tsp pure vanilla extract or paste scraped from one vanilla bean
2 tsp almond extract
2 cups dried figs, chopped (or any other kind of dried fruit)

Method

Preheat oven to 375° Line a rimmed baking sheet with foil. Oil the foil to prevent granola sticking to the bottom. Toss oats, nuts, coconut flakes and salt together in a bowl. In a separate bowl whisk together oil, honey, vanilla bean paste and almond extract. Stir into oat mixture and spread onto the foil lined baking sheet. Bake for 15 mins, turning and stirring the granola ½ way through to prevent uneven browning. Once your granola is finished baking, let it cool for 15 mins on the baking sheet. Once cooled, crumble the granola and stir in the dried fruit.
