This easy garlic shrimp and asparagus stir fry just might be your new favorite weeknight dinner. Its versatile, quick to prepare, and most importantly delicious! It’s just the kind of recipe we all need in our back pockets.

Who doesn't love shrimp and asparagus?

We love this dish for many reasons, but mainly because of its star ingredients. Who doesn't love garlic, shrimp and asparagus? Grilled, sautéed or (like in this dish) stir-fried with soy sauce, garlic and bell peppers...they always make a winning combo! 

Another reason we are loving this dish is because it’s stir fried, which means it is super fast and easy to prepare. Dinners that truly take less than 30 minutes can be hard to come by, especially ones that are this delicious!

We’ve also found that anything stir fried and served with rice might just be the way to a picky child’s heart. The veggies in this dish stay semi-firm and get coated with all that soy saucy goodness. Even our hard to please kids have filed no complaints thus far. Also, did I mention that this meal is HEALTHY? Bonus points!

Do I need a wok to make a good stir fry?

The simple answer to this question is a resounding no! You do not need a wok to make a great at-home stir fry for dinner. All you really need is a frying pan, but here are a few tips to get any stir fry just right:

  • Choose a large skillet with a rounded or flat bottom. (This will help you move the ingredients around easier.)
  • Using a medium-high heat is our preferred method. This gives the veggies enough time to get tender, without getting burned or becoming soggy.
  • Don’t overcrowd the pan.
  • Make sure your veggies and shrimp are roughly the same size for even cooking.

Garlic Shrimp Stir Fry

Serves 6


1/2 cup soy sauce
1 tbsp sesame oil
1 tbsp chili sauce
2 tbsp brown sugar
6 garlic cloves, minced
1 tsp corn starch
2 tsp water
2 tbsp olive oil
1 red bell pepper, large diced
1/2 lb asparagus, trimmed
1 cup snow peas
2 lbs shrimp, deveined
cooked rice, optional
cilantro, chopped, optional
sesame seeds, optional


To make the sauce combine the soy sauce, sesame oil, chili sauce, brown sugar, garlic, cornstarch and water in a small bowl. Set aside.

Heat the olive oil in a large skillet set over medium-high heat. Add the bell pepper, asparagus and snow peas. Sauté, stirring occasionally, for 2-3 minutes. Add the shrimp and sauté until pink, about 3-4 minutes.

Add the sauce to the shrimp and veggies in the pan. Simmer for 2-3 minutes until slightly thickened.

Serve over rice, sprinkle with cilantro and sesame seeds if desired.
