This Easy Harissa Chicken might just be one of the simplest, most elevated (that’s blogger-speak for sophisticated) chicken recipes we’ve ever created.  With a quick marinade made in our new Ascent Series Vitamix Blender, we were able to take some humble chicken and create a truly praiseworthy meal. What is in Harissa?

Harissa is a spicy paste traditionally made out of roasted red peppers, chili peppers, baklouti pepper, serrano peppers, and other hot chili peppers. It also contains garlic paste, coriander seed, saffron, rose, or caraway. It is delicious in every way and takes whatever it touches (like this Harissa Chicken) to the next level. We wanted to make a simple harissa marinade that would be a perfect go-to for any night of the week. Our homemade harissa has:

  • A jar of roasted red peppers (easy-peasy)
  • Lots of garlic
  • Caraway and coriander (visit your local grocer’s spice section if you don’t have these on hand)
  • Smoked paprika (an easy swap for the more smoky peppers we are leaving out)

What chicken should I use to make this Harissa Chicken?

While you can use this marinade to make harissa chicken breast, or harissa chicken thighs, we went with bone-in, skin-on chicken hindquarters. Not to toot my own horn, but they tasted delicious (I love dark meat any day of the week), plus my local grocer had them on sale for .75 cents a pound! You could even use this quick harissa marinade on a whole roasted chicken. I promise, whatever this marinade touches is destined to be delicious, so take your liberties.  

How do you make harissa chicken?

We’ve come up with a quick, straightforward way to make this delicious chicken and you are going to love how simple it is. We added all the marinade ingredients to our Ascent Series Vitamix blender. After that, we just covered our chicken with the marinade and tossed it in the oven! Alternatively, you could also make harissa chicken on the grill. So easy right?

You can make hot soup in any Vitamix! Say what? I know, it’s crazy and it’s awesome. How’s it work? It’s the friction of their blades that is the trick to making steaming hot soup in under 10 minutes, right in the container, no stove required. In addition to hot soups, smoothies, and juices, I also use my Vitamix to make baby food, pizza dough, nut butters, nut milks, dressings, and marinades like this Harissa Chicken marinade! I’m pretty much obsessed with the ease of the Vitamix and find any and all excuses to use it in the kitchen.

Easy Harissa Chicken

Serves 4

Ingredients

4 lbs bone in, skin on chicken, hind quarters or mix of thighs and legs
1 (12 oz) jar roasted red peppers, drained
6 garlic cloves
1 tsp caraway seeds
1 tsp coriander seeds
2 tsp smoked paprika
¼ tsp cayenne pepper
2 tsp salt
2 tbsp cup olive oil
2 tbsp red wine vinegar
¾ cup good quality mayonnaise

Method

  1. Add red peppers, garlic, caraway seeds, coriander seeds, paprika, cayenne, salt, olive oil and vinegar to the container of your Vitamix Blender and secure the lid.
  2. Select Variable 1 Turn machine on and slowly increase speed to Variable 10, then to high. Blend for one minute, using the tamper to press the ingredients into the blades. *Makes about 1 cup of marinade
  3. Pat chicken dry. Place on a rimmed baking sheet or into a large container. Pour the harissa marinade (reserve ¼ cup for the dipping sauce) over the chicken. Let the chicken marinade for 30 minutes.
  4. Heat grill to medium high heat, about 400°F. Place chicken on to the grill, skin side down. Grill for 4-5 minutes. Flip over and grill on the other side for 4-5 minutes. Continue cooking chicken on each side, flipping every 3-4 minutes (so it doesn’t burn) until the internal temperature reached 165°F. (about 25-30 minutes)
  5. In a small bowl, mix the remaining ¼ cup harissa sauce with the mayo until fully incorporated. Serve alongside the grilled chicken.
