This is not your Grandma’s Waldorf Salad. Instead, this Chicken Waldorf Salad has the sweet and savory flavor combo that we all know and love, but with a few “grown-up” substitutions that make it even better than the original.

Have any of you been to California Pizza Kitchen? I know the chain doesn’t exactly scream “fine dining,” but hey we all have our weaknesses, and this place is one of mine. One of my favorite things about chain restaurants (and this one in particular) is that they always seem to have really loaded salads, which I’m a total sucker for.

California PIzza Kitchen just so happens to have a Waldorf Salad on their menu that I completely adore, our version isn’t the exact same, but it definitely inspired this grown up version of a Waldorf Salad. (And sorry grandma, but I’m passing on the marshmallows.)

Here are a few things that take this Chicken Waldorf Salad recipe to the next level:

  • Homemade dressing with quality ingredients
  • Kale vs. Lettuce
  • Grilled chicken breasts vs poached
  • Candied walnuts vs roasted

You can absolutely sub out the candied walnuts and stick with roasted, but we LOVE the texture of candied walnuts in this dish! They give the salad an airy crunch that is hard to beat and the flavor is delicious. Simply roasting the nuts will definitely makes this Waldorf  healthier, but that’s what the kale is for, so go ahead and treat yourself!

Chicken Waldorf Salad

Serves 2

Creamy Dressing

3/4 cup mayonnaise
1/4 cup olive oil
2 tbsp white balsamic
2 tbsp lemon juice
zest of 1 lemon
1/4 tsp freshly ground pepper
2 tbsp honey

Ingredients

1 bunch red kale, stems removed and torn into small pieces
1 lb chicken breast, grilled with salt and pepper
1 cup candied walnuts
2-3 celery ribs, roughly chopped
1 cup grapes, cut in half
1 apple, cut into cubes

Method

  1. In a small bowl mix together dressing ingredients until smooth.
  2. In a large bowl toss torn kale with salad dressing. Top with sliced chicken breast, candied walnuts, celery, grapes and apples.
  3. If making ahead, store prepared salad without dressing the kale. Dress salad right before serving.
