Recently, Natalie and I were presented an interesting challenge by Creyente to use their Mezcal Joven to create a cocktail based on the elements of our zodiac signs. Now, I know what some of you might be thinking... “Elements? Zodiac signs?,” but just hear me out. Whether or not you believe in what your birthday sign says about you, the Earth’s elements can be fun to play around with in a light hearted way and sometimes it takes a tricky challenge like this to force you to think outside of the box.

Natalie, born in January, is an Aquarius which we found out represents the element of air. Being born in November, I’m a Sagittarius which has the element of fire. When we set out to create this element-based cocktail, we wanted to stay true to the taste of Mezcal Creyente Joven, which is a blend of two exceptional mezcals from the Oaxaca region of Mexico. Full bodied with sweet hints of fruit and light herbal notes, Mezcal Creyente Joven has a smoky, layered flavor throughout, giving the liquor delightful layers of complexity.

For the element of fire we wanted something that would play off the delicious mesquite wood flavors in this mezcal, so we decided that the cocktail had to have a charred element to it...and what better to char for your cocktail than citrus? Grapefruit to be exact. For the element of air, we immediately knew we needed to add bubbles, but just adding something carbonated would be too easy, so we took it a step further and added egg white to our cocktail, giving the top a light and airy foam. (Sound strange? Trust us, you really must try it!)

What resulted from our experimentation incorporating our zodiac signs and Mezcal Creyente Joven was this Paloma Sour with charred grapefruit, seltzer and whipped egg whites. It’s a deliciously simple and straightforward cocktail with a few surprise “elements” (pun intended) that make it completely crave worthy, and something that we will be making again and again. Charred Grapefruit & Mezcal Paloma Sour

Serves 1


1 medium grapefruit
1.5 oz Mezcal Creyente Joven
1/2 oz simple syrup
1 oz club soda
1 egg white
3 dashes angostura bitters


  1. Cut the grapefruit in half horizontally. Cut one half into 3 (½ -inch) slices and keep the other intact. Using an open flame from a gas stove, a kitchen torch or a broiler, carefully char the grapefruit. Squeeze the juice from the charred grapefruit half into a bowl to be used in the cocktail and reserve the charred slices as a garnish.
  2. In a cocktail shaker filled with ⅓ cup ice, combine Mezcal, 2 ounces charred grapefruit juice, simple syrup, club soda, egg white and bitters. Cover with a tight fitting lid, shake vigorously for 15 seconds, and strain into a cocktail glass.
  3. Garnish with charred grapefruit wedges.
