A Crunchy Slaw With Shredded Chicken + Our Favorite Dressing

This recipe originates in our love for cabbage. It’s hearty, and delivers a good bang for your buck. Unlike the mayonnaise dressing in our Classic Coleslaw, we’re tossing this chicken salad in a flavorful miso-ginger dressing. You can add Shredded Chicken or Poached Chicken to the dish, and serve it for dinner or lunch throughout the week. We’ve got lots of great shredded chicken recipes for you to try. Ingredients For Miso-Ginger Chicken Slaw

  • For the dressing – miso, vegetable oil, vinegar, salt, sesame oil, honey, ginger, garlic

  • For the slaw – chicken, almonds, cilantro, green cabbage, red cabbage, carrots, and green onions

  • For topping – fried shallots

How to Make This Miso-Ginger Slaw With Shredded Chicken

  1. Make the dressing in a blender or food processor. You can also use a whisk and some arm muscle if needed.

  2. Make the slaw. In a large bowl, combine the chicken, almonds, cilantro, green cabbage, red cabbage, carrots, and green onions.

  3. Drizzle with the dressing and toss to combine.

  4. Sprinkle with the fried shallots if using and serve.

How to Store Leftovers + Tips

  • Leftover slaw holds up well for up to 2 days. We like to eat it for lunch the next day. Serve with rice or on its own.

  • Coleslaw can be frozen for one month, but we don’t recommend it because the texture changes.

  • Make it your own – Sprinkle with toasted sesame seeds or a tangy feta or cotija cheese.

    Ingredients

    • 3 tablespoons white or yellow miso paste
    • ⅔ cup vegetable oil
    • 3 tablespoons unfiltered apple cider vinegar
    • ¾ teaspoon sea salt
    • 1½ teaspoons sesame oil (toasted or untoasted)
    • 1 tablespoon honey
    • 1½ teaspoons grated ginger
    • 2 garlic cloves, minced
    • 3 cups cooked shredded chicken
    • ¾ cup sliced almonds, toasted
    • ½ cups chopped cilantro leaves
    • 3 cups shredded green or Napa cabbage (from 1 head)
    • 3 cups shredded red cabbage (from 1 head)
    • 2 large carrots, julienned
    • 4 green onions, chopped
    • Fried shallots, for serving (optional)

    Method

    1. In a blender or food processor, combine the miso, vegetable oil, vinegar, salt, sesame oil, honey, ginger, garlic, and 3 tablespoons of water. Blend until smooth.

    2. In a large bowl, combine the chicken, almonds, cilantro, green cabbage, red cabbage, carrots, and green onions. Drizzle with the dressing and toss to combine. Sprinkle with the fried shallots if using and serve immediately.

      we'd use just under 1/2 tsp dried. enjoy!

      When storing this for the week do you leave it undressed?

      Because it is cabbage it should stay pretty crisp even with dressing but you can leave it undressed if you prefer.
