Grilled Chicken Shawarma Kebab

A kebab is simply meat marinated in mouth watering spices and slowly grilled over an open fire. Our shortcut to this traditional dish of chicken shawarma is perfect for healthy summer grilling!

I often get asked what my favorite meal to cook for guests is. That’s an easy answer for me, because it also happens to be my favorite thing to eat: chicken shawarma. It’s easy. It’s flavor packed. It’s a winner every time. For all those reasons and more, I entered my fine tuned shawarma recipe into a cooking contest last week while in Cincinnati, OH with Kroger.

At the beginning of this year we were asked to be one of several “influencers” (that’s marketing speak for blogger/instagrammer/facebooker/youtuber/tweeter) working as Kroger stores ambassadors for 2018. Our answer was an easy “yes!”, because Kroger is a brand we’ve loved for years (long before we were bloggers). As part of our partnership, last week I found myself in Cincinnati, OH with some incredible minds and creatives to hear all about what Kroger is up to this year. We got sneak peeks into upcoming products, heard all about where their online and digital experience is moving, and best of all heard all about their goal for Zero Hunger Zero Waste.

Zero Hunger Zero Waste is Kroger’s initiative to become a zero waste company by 2020 and a zero food waste company by 2025. If you know much about the amount of waste that occurs daily in the US, then you know this is HUGE and just one of the reason why we are thrilled to consider them partners.

After a long day of eating, being inspired, and setting personal goals based on their initiative, we got to cook!

Which brings me to this chicken shawarma. Sounds fancy doesn’t it? Trust me when I say it’s not. Simple is the key with this craveable dish.

Yogurt is seasoned with turmeric, cinnamon, cumin, and cardamom to create a flavor packed marinade for chicken thighs. After marinating for a couple of hours (or as little as 20 minutes if that’s all you have) the chicken is then skewered (or not) and ready for the grill (or oven). Once grilled, I serve it alongside a bowl of garlicky tahini sauce, cucumbers, tomatoes, Jeweled Rice, pita, feta, and of course Classic Creamy Hummus for a truly delectable Mediterranean inspired feast perfect for summer cook outs! (Who needs ribs?)

If you’re curious, no I didn’t win the cook off. I was up against some killer turkey burgers that were loaded with veggies and those took the top prize. This chicken shawarma though, it’s a winner in my book every day and I’m pretty confident it will be in yours, too.

Grilled Chicken Shawarma Kebab

  • Serves: 6

  • 3 lbs Boneless skinless chicken thighs
  • 1 cup Plain greek yogurt
  • 2 tsp Cumin
  • 2 tsp Cardamom
  • 2 tsp Turmeric
  • 2 tsp Cinnamon
  • 2 tsp Salt
  • Fresh parsley (optional)

Tahini Sauce


  1. Cut up chicken into 1” pieces. In a large bowl combine yogurt, cumin, cardamom, cinnamon, turmeric and salt. Add chicken to bowl and toss until chicken is coated in marinade. Cover and place in refrigerated for 1 hour. (if you don’t have time for this the meat will still be delicious).
  2. Using soaked bamboo or metal skewers, tightly skewer the meat.
  3. Preheat grill to medium heat. Place marinated skewers on grill and cook until chicken is cooked through, turning often.
  4. In a small bowl combine all ingredients for tahini sauce. It will look like it is separating for a minute, but continue to stir until smooth.
  5. Serve chicken warm with tahini sauce and a simple salad of tomatoes and cucumber.
