Using frozen cauliflower rice and smoked sausages (meaning they are already cooked) and store-bought pesto (or leftover homemade pesto, if you’re lucky enough to have that) mean that this easy dinner idea takes almost no prep work. Toss everything on a sheet pan, bake it until it’s roasted and delicious, and that’s that! Cauliflower Rice Sheet Pan Ingredients
Frozen cauliflower rice. Low-carb devotees know it as cauliflower rice, but the bags (which you can find in the frozen veggie section of the grocery store) usually say “riced cauliflower.”
Cherry tomatoes. Since you’ll be roasting these tomatoes (yum) it doesn’t matter how ripe they are, which means yes, you can make this cauliflower rice sheet pan dinner any time of the year!
Smoked sausage. Smoked sausages are already cooked, which makes life so easy. They are also savory and delicious and taste even better after a roast.
Pesto. Homemade Pesto is the best, but store-bought pesto will make dinner easy and we’re in favor of that, too.
- Arugula & fresh basil. These light, herbaceous greens add the lift that this sheet pan dinner needs — toss them in at the end, and if you have picky eaters who’d prefer no greens with their dinner, that’s OK! Just scoop their servings off the pan before you toss in the greens.
How To Make The Easiest Sheet Pan Dinner
Slice smoked sausages. We like to do thin slices on the diagonal, because it looks nice.
Open a bag of cauliflower rice.
Dump it out onto a sheet pan.
Mix it with sausages, tomatoes, pesto, salt and pepper right on the sheet pan itself. Go easy on the salt (you can always add more at the end) because smoked sausages can be pretty salty, and the same goes for store-bought pesto.
Roast! Just until the tomatoes blister, roughly 30 minutes.
Serve! Add the arugula and basil and serve it up! A dusting of Parm will make it even better, but it’s not a must.
