In my family, it’s not Easter if we don’t dye eggs! I usually hard-boil at least 18 eggs, so that everyone can color eggs to their heart's content. I pull out the colorful eggs on Easter Sunday and often use little bowlfuls of them to decorate the table. They look so cheerful, I absolutely love them!
Sometimes, the kids will crack into one or two of them during Easter dinner, but usually, I wake up Easter morning to a fridge full of colorful eggs that have served their festive purposes and now just need to get eaten. If the cool pack that fits in my kids’ lunch box is frozen, I’ll pack one or two eggs in their lunch, but it’s not their favorite lunch snack (I guess no one wants to sit next to the kid with a smelly egg in their lunch). So it’s up to me! Once I’ve eaten a few colored Easter eggs with just lots of salt and pepper, I usually make a recipe that uses hard boiled eggs for dinner! It’s a great way to blitz through those leftover Easter eggs.
Deviled Eggs
Mustard, mayo and a splash of pickle juice are the ‘secret’ ingredients for my super classic deviled egg recipe! You can make a few of these to enjoy as appetizers on Easter, or wait and make a big batch the next day.
Egg Salad Sandwich
My mom always made a huge batch of egg salad with leftover Easter eggs, and I usually uphold the tradition. I sometimes make it into this sandwich, but I often just eat the egg salad on crackers or even potato chips!
Classic Potato Salad
Grandma always put hard boiled eggs in her potato salad, so that’s how I make it, too. With plenty of mayo, radishes for crunch and a sprinkling of fresh herbs, this recipe goes with almost any dinner you might be making. Roast chicken? Grilled steak? Check check check.
Grand Aioli
If you haven’t made a grand aioli before, it’s time! It sounds fancy, but all it is is a snack platter of crisp veggies, usually raw or blanched and some hard boiled eggs with fresh aioli for dipping everything into. Easy! Gorgeous! Goes with rosé.
Easy Niçoise Salad
Another one that sounds fancy but is actually super simple and a recipe that absolutely must include hard boiled eggs! All you’ll need are a few cans of good tuna, a jar of olives and some good greens, et voila! Nicoise salad is served.
Classic Cobb Salad
For the American version of a loaded (composed) dinner salad, try a Cobb! With chicken, bacon, avocados and blue cheese, a classic Cobb salad is one of my favorite recipes for using up hard boiled eggs. With so many bold flavors, everyone loves this one, even the kids!
Pesto Potato Salad
If you prefer your potato salad without mayo, this pesto potato salad is your speed. When you add hard boiled eggs (and I always do!) it becomes more of a complete meal because now it includes protein!
