Za’atar Roasted Carrots with Feta and Pumpkin Seeds

Ingredients
2 pounds
large carrots, peeled, halved, and cut into 3-inch pieces
2 tablespoons
extra-virgin olive oil
1 teaspoon
kosher salt
2 teaspoons
za’atar
¼ cup
roughly chopped fresh cilantro
¼ cup
crumbled feta cheese
2 tablespoons
toasted pepitas
Method
Preheat the oven to 400°F with a rack in the center position.
On a rimmed sheet pan, toss the carrots with the olive oil, salt and za’atar until coated. Spread out in a single layer. Bake for 15 to 18 minutes, or until the carrots are browned and tender.
Transfer the carrots to a large serving platter and evenly sprinkle with the cilantro, feta, and pepitas. Serve family style.
