Watermelon Salad

Ingredients
- ⅓ cup white balsamic vinegar
- 1 garlic clove, minced
- 2 tablespoons brown sugar
- ¼ cup extra-virgin olive oil
- ¼ teaspoon sea salt
- ¼ teaspoon freshly cracked black pepper
- 6 cups ¾-inch cubed watermelon
- ½ English cucumber, diced (about 1½ cups)
- ¼ cup thinly sliced red onions
- 6 ounces feta cheese, crumbled
- ¼ cup mint leaves, roughly chopped or torn (optional)
- ¼ cup basil leaves, roughly chopped or torn
- Flakey salt, for serving
Method
In a small bowl, whisk together the vinegar, garlic, brown sugar, olive oil, salt, and pepper.
Place the watermelon, cucumber, onions, ⅔ of the feta, 3 tablespoons of the mint, if using, and 3 tablespoons of the basil in a large serving bowl. Drizzle with the dressing and toss until combined.
Sprinkle with the remaining feta, mint, basil, and flaky salt to taste. Serve immediately.
