Watermelon Salad

Ingredients

  • ⅓ cup white balsamic vinegar
  • 1 garlic clove, minced
  • 2 tablespoons brown sugar
  • ¼ cup extra-virgin olive oil
  • ¼ teaspoon sea salt
  • ¼ teaspoon freshly cracked black pepper
  • 6 cups ¾-inch cubed watermelon
  • ½ English cucumber, diced (about 1½ cups)
  • ¼ cup thinly sliced red onions
  • 6 ounces feta cheese, crumbled
  • ¼ cup mint leaves, roughly chopped or torn (optional)
  • ¼ cup basil leaves, roughly chopped or torn
  • Flakey salt, for serving

Method

  1. In a small bowl, whisk together the vinegar, garlic, brown sugar, olive oil, salt, and pepper.

  2. Place the watermelon, cucumber, onions, ⅔ of the feta, 3 tablespoons of the mint, if using, and 3 tablespoons of the basil in a large serving bowl. Drizzle with the dressing and toss until combined.

  3. Sprinkle with the remaining feta, mint, basil, and flaky salt to taste. Serve immediately.
