1 (12 ounce) bag
frozen cauliflower gnocchi, (we like Trader Joe’s)
2 cups
baby kale
½ cup
roughly chopped walnuts
½ cup
vegan kale pesto, store-bought or homemade, (we like Trader Joe’s)
Method
Heat the olive oil in a large skillet over medium-high heat. Once the oil is glistening, add the gnocchi and cook, stirring occasionally, until the gnocchi is warmed through and golden brown, 6 to 8 minutes.
Stir in the kale and walnuts and cook, stirring, until the kale has wilted, about 3 minutes. Add the pesto and stir until the gnocchi is evenly coated.
