If you are planning to take these pancakes on a camping trip, you can prepare the pancake mix ahead of time by thoroughly whisking all of the dry ingredients in a bowl and placing it in an airtight container until ready to use.
When you are ready to prepare the pancakes, add the milk and eggs into 2 cups of dry ingredients in a medium sized bowl. Whisk together until fully incorporated. Do not over mix.
Heat a large skillet over a small fire or coals prepared for cooking over. Alternatively place the skillet over medium heat on the stove top.
Melt 1 tablespoons of butter until foamy. Pour ⅓ cup batter per pancake onto to the skillet fitting 2-3 per batch.
Sprinkle each pancake with 1-2 tablespoons trail mix and cook until the surface of each pancake has some bubbles on it, about 1-2 minutes. Using a spatula, carefully flip each pancake and cook until the underside is also toasty brown, 1-2 minutes longer.
Repeat until all of the batter is gone. Serve pancakes with fresh fruit and maple syrup.
