Trail Mix Pancakes

Ingredients
- 2 cups all-purpose flour
- 3 tablespoons sugar
- 4 teaspoons baking powder
- 1 teaspoon sea salt
- 2 cups whole milk
- 2 large eggs, beaten
- 4 tablespoons salted butter, plus more for serving
- 1½ cups trail mix
- Maple syrup, for serving
Method
In a large bowl, combine the flour, sugar, baking powder, and salt.
Whisk the milk and eggs into the dry ingredients, until fully incorporated. Do not overmix.
Add 1 tablespoon butter to a large skillet over medium heat. Once the butter is melted and bubbling, working in batches, pour ⅓ cup portions of the batter into the skillet.
Sprinkle each pancake with 1 heaping tablespoon trail mix and cook until the surface of each pancake forms small bubbles, about 1-2 minutes. Using a spatula, flip each pancake and cook until golden brown, 1-2 minutes longer. Transfer the pancakes to a plate.
Repeat with the remaining butter, pancake batter and trail mix. Serve the pancakes with butter and drizzled with maple syrup.
