Trail Mix Pancakes

Ingredients

  • 2 cups all-purpose flour
  • 3 tablespoons sugar
  • 4 teaspoons baking powder
  • 1 teaspoon sea salt
  • 2 cups whole milk
  • 2 large eggs, beaten
  • 4 tablespoons salted butter, plus more for serving
  • 1½ cups trail mix
  • Maple syrup, for serving

Method

  1. In a large bowl, combine the flour, sugar, baking powder, and salt.

  2. Whisk the milk and eggs into the dry ingredients, until fully incorporated. Do not overmix.

  3. Add 1 tablespoon butter to a large skillet over medium heat. Once the butter is melted and bubbling, working in batches, pour ⅓ cup portions of the batter into the skillet.

  4. Sprinkle each pancake with 1 heaping tablespoon trail mix and cook until the surface of each pancake forms small bubbles, about 1-2 minutes. Using a spatula, flip each pancake and cook until golden brown, 1-2 minutes longer. Transfer the pancakes to a plate.

  5. Repeat with the remaining butter, pancake batter and trail mix. Serve the pancakes with butter and drizzled with maple syrup.
