Thai Zoodle Salad

Ingredients
- 8 cups zucchini noodles (about 4 medium zucchini)
- 2 cups shredded poached chicken
- 2 cups shredded carrots
- 2 cups shredded purple cabbage
- 1 cup bean sprouts
- 1 cup fresh cilantro, minced
- 1/2 cup crushed peanuts
- Thai Peanut Dressing
Method
Toss all ingredients together and serve!
Refrigerate without dressing and peanuts for up to 4 days in an airtight container if using recipe for meal prepping.
