Thai Chicken Pizza

Ingredients
- 2 cups cooked, shredded chicken
- 1 cup Thai Peanut Sauce
- ¾ pound store-bought or homemade pizza dough
- 4 tablespoons hoisin sauce
- 2 cups grated pepper Jack cheese
- ½ small red onion, thinly sliced
- ¼ cup mung bean sprouts
- ¼ cup loosely packed chopped fresh cilantro
- ¼ cup roughly chopped dry roasted peanuts
- Red pepper flakes (optional)
Method
Preheat the oven to 450°F with a rack in the center position.
In a medium bowl, toss together the chicken and peanut sauce until fully coated.
Line a large sheet pan with parchment paper or prepare a pizza stone by placing it in the oven. On a lightly floured surface, stretch or roll the dough into a circle about 12-inch in diameter and roughly ½ an inch thick. Transfer the dough to the prepared baking sheet or preheated pizza stone.
Spoon the hoisin sauce onto the dough, and spread into an even layer, leaving 1-inch of crust exposed around the edges. Cover the sauce with ¾ of the pepper Jack cheese. Top evenly with the onion and chicken.
Place the pizza in the oven until the edges are golden brown and the center of the crust is cooked through, about 12-15 minutes.
Carefully transfer the pizza to a cutting board. Top with bean sprouts and garnish with cilantro, peanuts, and red pepper flakes (if using). Cut into 8 pieces and serve warm.
