Method
Preheat the oven to 350°F with a rack in the center position. Line a rimmed sheet pan with parchment paper. Arrange chips in a single layer on the prepared sheet pan.
Spread 1 to 2 tablespoons of refried beans on each chip. Sprinkle with the taco seasoning. Add steak pieces to half of the chips, and chicken pieces to the other half of the chips, if using. Divide the cheddar and pepper Jack evenly across the chips. Add a single slice of pickled jalapeño to each chip, if desired.
Bake until the cheese is melted, about 12 minutes.
Top with salsa, sour cream, red onion, and cilantro, if desired. Serve warm.
