Sweet Potato Hash

Ingredients

  • 2 tablespoons extra-virgin olive oil
  • 2 sweet potatoes, (about 1 pound total), peeled and cut into ¾-inch cubes
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • ½ small yellow onion, thinly sliced
  • 1 to 2 cups cooked meat, such as crumbled sausage, chopped bacon, shredded chicken or carnitas
  • ½ teaspoon kosher salt, or to taste
  • 2 large eggs, fried
  • 1 avocado thinly sliced, (optional)
  • Fresh cilantro, for serving (optional)

Method

  1. Heat the oil in a medium skillet over medium-high heat. Add the sweet potatoes and cook, turning occasionally, until starting to brown, about 5 minutes. If browning too quickly, reduce the heat slightly. 
  2. Add the bell peppers and onion and cook, stirring, until the vegetables are tender, about 10 minutes more. 
  3. Stir in the meat of your choice and cook until warmed through. Season with salt to taste.
  4. Divide among 4 plates and top with fried eggs, avocado, and cilantro, if using.
