Sweet Potato Fries

Ingredients
- 2 large sweet potatoes (about 2 pounds), peeled and cut into ⅓-inch-thick sticks
- 3 tablespoons extra-virgin olive oil
- ¾ teaspoon brown sugar
- ½ teaspoon granulated garlic
- ½ teaspoon chipotle chili powder or chili powder
- ¾ teaspoon sea salt
- ¼ teaspoon freshly cracked black pepper
- Chipotle mayonnaise, for serving (optional)
Method
- Preheat the oven to 425°F. Line two rimmed sheet pans with parchment paper.
- Divide the sweet potatoes between the prepared sheets. Drizzle with the olive oil and toss until coated. Spread out into a single layer and bake for 20 minutes. Remove from the oven, flip the fries and rotate the pans. Return the sheet pans to the oven and bake until tender and golden, 12 to 15 minutes more.
- Meanwhile, in a small bowl, combine the brown sugar, granulated garlic, chipotle chili powder, salt, and pepper.
- Toss the warm fries with as much seasoning as desired. Serve with the chipotle mayonnaise, if using.
Notes
To Deep Fry:
Attach a deep-fry thermometer to the side of a large, heavy pot. Add 40 ounces of vegetable oil to a 6 quart pot over medium high heat. Once the oil reaches 350°F, working in batches, carefully add the potatoes to the hot oil, and cook until softened and golden brown, 6 to 8 minutes. Transfer to a paper-towel-lined plate. Repeat with the remaining sweet potatoes, allowing the oil to return to 350°F between batches.
Meanwhile, in a small bowl, combine the brown sugar, chipotle chili powder, salt, and pepper.
Toss the warm fries with as much seasoning as desired. Serve with the chipotle mayonnaise, if using.
