Sweet Potato Carnitas Hash

Ingredients

  • 2 tablespoons extra-virgin olive oil
  • 2 sweet potatoes (about 1 pound total), peeled and cut into 1-inch cubes
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • ½ small yellow onion, thinly sliced
  • 1 to 2 cups Pork Carnitas
  • ½ teaspoon kosher salt, or to taste
  • 2 large eggs, fried
  • 1 avocado, thinly sliced (optional)
  • Fresh cilantro, for serving (optional)

Method

  1. Heat the oil in a medium skillet over medium-high heat. Add the sweet potatoes and cook, turning occasionally, until starting to brown, about 5 minutes. If the sweet potatoes are browning too quickly, reduce the heat slightly. Add the bell peppers and onion and cook, stirring, until the vegetables are tender, about 10 minutes more. Stir in the carnitas and cook until warmed through. Taste and season with salt.

  2. Divide among 4 plates and top with fried eggs, avocado, and cilantro, if using.
