Stir-Fried Baby Bok Choy

Ingredients

  • 4 tablespoons toasted sesame oil
  • 1 ½ pounds baby bok choy, halved, about 4
  • 4 garlic cloves, minced
  • 3 tablespoons soy sauce, tamari or coconut aminos
  • ½ teaspoons kosher salt
  • ¼ teaspoon red pepper flakes, plus more for serving
  • 2 tablespoons water
  • Toasted sesame seeds, for serving

Method

  1. In a large wok or skillet, heat the sesame oil over medium high heat. Working in small batches, add the bok choy cut side down and cook until lightly browned, 3-4 minutes. Remove from the skillet and continue until all bok choy has been used.
  2. Add all of the bok choy back to the wok along with the garlic and cook, stirring until fragrant, 1 minute. Add in the soy sauce, salt, red pepper flakes and water. Bring to a simmer, stirring, until the bok choy is well-coated. Continue to cook, stirring occasionally until the leaves are wilted and the stalks are tender, but still have a slight crunch. 
  3. Transfer the bok choy to a plate, top with sesame seeds and more red pepper flakes before serving.
