Spiced Bourbon Cocktail

Ingredients
- 2 ounces bourbon
- 1 ounce apple cider
- ¾ ounce fresh lemon juice (from 1 lemon)
- 1 ounce Cranberry-Orange Simple Syrup (recipe below)
- Sparkling wine
- Orange peel, for serving
Cranberry-Orange Simple Syrup
- 6 (3-inch) strips orange peel, pith removed (from 1 medium orange)
- 1 cup fresh or frozen cranberries
- 1 cinnamon stick
- ½ cup sugar
Method
Make the Cranberry-Orange Simple Syrup:
Make the simple syrup. In a small saucepan, heat the orange peel, cranberries, cinnamon stick, sugar, and ½ cup water over medium-low heat. Cook, stirring, until sugar is just dissolved, about 5 minutes.
Let cool completely, then strain through a fine-mesh sieve. Store in an airtight container or sealed jar in the refrigerator for up to 2 weeks. Makes ½ cup.
Make the Cocktail:
In a cocktail shaker, combine the bourbon, apple cider, lemon juice, and Cranberry-Orange Simple Syrup. Add ice, cover, and shake vigorously until the outside of the shaker is chilled, about 30 seconds. Strain into a chilled coupe glass. Top with the sparkling wine and garnish with the orange peel.
