Sloppy Joes
- Serves: 4
- Prep Time: 10 min
- Cook Time: 20 min
Ingredients
- 1 pound 90/10 ground beef
- 1 small green bell pepper, seeded, quartered
- 1/4 yellow onion, quartered
- 1 jalapeño, halved and seeded
- 3 garlic cloves
- 4 tablespoons (½ stick) unsalted butter or extra-virgin olive oil
- 1/2 cup ketchup
- 1 tablespoon tomato paste
- 2 teaspoons light brown sugar
- 2 teaspoons chili powder
- 1 teaspoon yellow mustard
- 1 teaspoon garlic powder
- 1 teaspoon Worcestershire sauce
- 1/2 teaspoon sea salt
- 4 hamburger buns
Method
- In a large skillet over medium-high heat, brown the beef, breaking it up with a wooden spoon as you go, for about 8 minutes.
- Meanwhile, in a food processor, combine the bell pepper, onion, jalapeño, and garlic. Pulse until everything is finely minced, 10 to 12 times.
Once the beef is browned, reduce the heat to medium. Add 1 tablespoon of the butter or olive oil along with the minced pepper-onion mixture. Cook, stirring occasionally, until the liquid is reduced and the vegetables are softened, about 5 minutes. Add the ketchup, ⅓ cup water, tomato paste, brown sugar, chili powder, mustard, garlic powder, Worcestershire, and salt, stirring to combine. Bring to a simmer, then reduce the heat to medium-low. Cook until the beef mixture is thickened, about 5 minutes more.
Meanwhile, turn the broiler to high. Spread the insides of the hamburger buns with the remaining 3 tablespoons butter. Place the buns, buttered side up on a baking sheet and broil until golden brown, 1 to 2 minutes.
Spoon the sloppy joe mixture on the buttered buns and serve.
