Shallot Vinaigrette

Method
In a large bowl whisk together the olive oil, mustard, honey, shallots, lemon zest and juice, salt and pepper until the oil and lemon juice are fully emulsified.
Add the lettuce to the bowl and toss to coat fully with the dressing. Sprinkle with chives, green olives and pistachios.
