Simple Green Salad with Shallot Vinaigrette

Ingredients

  • 1 (5 ounce) box lettuce mix (spring mix, super green mix or butter lettuce mix)
  • 2 tablespoons minced chives
  • 15 green olives, pitted and halved (about ¾ cup)
  • ¼ cup honey roasted pistachios, roughly chopped

Shallot Vinaigrette

  • ⅓ cup extra-virgin olive oil
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey
  • 2 tablespoons minced shallots
  • 1 tablespoon lemon juice (from 1 lemon)
  • 1 teaspoon lemon zest (from 1 lemon)
  • ¼ teaspoon sea salt
  • Freshly cracked black pepper, to taste

Method

  1. In a large bowl, whisk together the olive oil, mustard, honey, shallot, lemon zest, lemon juice, salt, and pepper until the oil and lemon juice is fully emulsified.

  2. Add the lettuce to the bowl and toss to coat fully with the dressing. Sprinkle with chives, green olives, and pistachios.
