Shrimp Ceviche

Ingredients

  • 1 pound raw medium shrimp, peeled and deveined
  • ½ teaspoon fresh lime zest
  • ½ cup fresh lime juice (from 5 limes) + ½ cup additional fresh lime juice (if using the raw method, see below)
  • 3 Roma tomatoes, seeded, chopped (about 1 cup)
  • 3 Persian cucumbers, chopped (about 1 cup)
  • ½ cup chopped red onion
  • ¼ cup minced fresh cilantro
  • ½ teaspoon sea salt, plus more to taste
  • ½ teaspoon sugar
  • ¼ teaspoon cayenne pepper
  • ¼ teaspoon garlic powder
  • ¼ teaspoon cumin
  • 1 medium avocado, pitted and diced
  •  Tortilla chips or plantain chips, for serving
