Shredded Chicken

Ingredients

  • 2 large chicken breasts, about 1 ½ pounds
  • 2 quarts water or chicken stock
  • 1 tablespoon kosher salt

Method

  1. Place the chicken breasts in a medium sized pot.

  2. Add enough cold water until the chicken breasts are fully submerged, season the water with salt.

  3. Bring the water to a simmer over medium heat. Turn the heat to low, cover the pot and simmer until the chicken has reached an internal temp of 165°F on an instant-read thermometer, about ten minutes.

  4. Remove the pot from the heat. Let the chicken rest in the poaching liquid for 3-5 minutes.

Yields 2.5 cups shredded chicken
