Seven Layer Dip

Ingredients
- 2 large ripe avocados, pitted and smashed
- ¼ cup minced cilantro
- ¼ cup finely diced red onion
- 2 garlic cloves, minced
- 1 jalapeño, seeded and finely chopped (optional)
- ½ teaspoon kosher salt
- ¼ teaspoon freshly cracked black pepper
- 3 tablespoons fresh lime juice (from 2 limes)
- 1½ cups sour cream
- 3 tablespoons taco seasoning, store-bought or homemade
- 1 (16-ounce) can refried beans
- 2 cups shredded Mexican-style cheese blend
- 1 cup cherry or grape tomatoes, quartered
- 1 (2.25-ounce) can sliced black olives, drained
- 1 bunch green onions, finely chopped
- Corn tortilla chips, for serving
Method
In a medium bowl, combine the smashed avocados, cilantro, red onion, garlic cloves, jalapeño (if using), salt, pepper, and 2 tablespoons of the lime juice.
In a small bowl, combine 1¼ cups of the sour cream with 2 tablespoons of the taco seasoning.
In a second medium bowl, combine the refried beans with the remaining 1 tablespoon of lime juice, ¼ cup of sour cream, and 1 tablespoon of taco seasoning. Stir until smooth.
In a 9 x 13-inch pan, spread the refried bean mixture out in a single layer. Top with a single layer of the guacamole, then cover with a single layer of the sour cream. Top with the cheese, tomatoes, black olives, then green onions in separate layers.
Serve with tortilla chips.
