Seven Layer Dip

Ingredients

  • 2 large ripe avocados, pitted and smashed
  • ¼ cup minced cilantro
  • ¼ cup finely diced red onion
  • 2 garlic cloves, minced
  • 1 jalapeño, seeded and finely chopped (optional)
  • ½ teaspoon kosher salt
  • ¼ teaspoon freshly cracked black pepper
  • 3 tablespoons fresh lime juice (from 2 limes)
  • 1½ cups sour cream
  • 3 tablespoons taco seasoning, store-bought or homemade
  • 1 (16-ounce) can refried beans
  • 2 cups shredded Mexican-style cheese blend
  • 1 cup cherry or grape tomatoes, quartered
  • 1 (2.25-ounce) can sliced black olives, drained
  • 1 bunch green onions, finely chopped
  • Corn tortilla chips, for serving

Method

  1. In a medium bowl, combine the smashed avocados, cilantro, red onion, garlic cloves, jalapeño (if using), salt, pepper, and 2 tablespoons of the lime juice.

  2. In a small bowl, combine 1¼ cups of the sour cream with 2 tablespoons of the taco seasoning.

  3. In a second medium bowl, combine the refried beans with the remaining 1 tablespoon of lime juice, ¼ cup of sour cream, and 1 tablespoon of taco seasoning. Stir until smooth.

  4. In a 9 x 13-inch pan, spread the refried bean mixture out in a single layer. Top with a single layer of the guacamole, then cover with a single layer of the sour cream. Top with the cheese, tomatoes, black olives, then green onions in separate layers.

  5. Serve with tortilla chips.
