cheddar cheese, shredded, divided

green onions, optional (about ½ cup)

hash browns, thawed

butter, melted
Method
Heat oven to 350°F.
Heat a large skillet over medium heat. Brown the sausage (If you buy sausage links, make sure to remove the casting first.)
In a large bowl, whisk the eggs with the salt, pepper, cayenne and whipping cream until fully combined and all of the yolks are broken and incorporated.
Add the browned crumbled sausage, ¾ of the cheese, green onions and hash browns to the bowl with the egg mixture. Stir until fully combined.
Spread the butter into a 9x13 baking dish. Pour the egg and sausage mixture into the baking dish and top with remaining cheese.
Bake for 40 minutes before covering with foil. Bake for another 15 minutes with foil on so the top doesn't get too brown.
