Breakfast Casserole

Ingredients
- 2 tablespoons salted butter, melted
- 1 pound ground pork breakfast sausage
- 12 large eggs
- 1 teaspoon sea salt
- ½ teaspoon freshly cracked black pepper
- ½ teaspoon cayenne pepper
- 1 cup heavy whipping cream
- 3 cups shredded cheddar cheese
- 1 pound frozen hash browns, thawed
- 4 green onions, white and green parts chopped, plus more for garnish (optional)
Method
Preheat the oven to 350°F with a rack in the center position. Grease a 9x13-inch baking dish with the butter.
Heat a large skillet over medium heat. Add the sausage and cook, breaking it up with a wooden spoon, until browned, about 10 minutes.
Meanwhile, in a large bowl, whisk the eggs, salt, pepper, cayenne and whipping cream until fully combined, 2-3 minutes.
Using a slotted spoon, transfer the sausage to the bowl with the eggs. Stir in 2 cups of the cheese, the hash browns and the green onions (if using).
Pour the egg and sausage mixture into the prepared baking dish and sprinkle all over with the remaining 1 cup of cheese.
Cover the baking dish with foil. Bake in the oven for 20 minutes. Remove the foil and bake for 35-40 minutes longer, until the cheese is melted and the eggs are golden brown and set in the center.
Remove from oven and let cool for 10 minutes. Garnish with additional green onions, if using, slice and serve.
