- Cook Time: 15 min
Ingredients
- 1 pound salmon filet
- ½ teaspoon kosher salt
- 1 pound orecchiette, other medium sized pasta
- ½ pound green beans, cut into 2-inch pieces
- 1 cup Homemade Basil Pesto or store-bought
- 1 tablespoon lemon zest
- ½ cup freshly grated Parmesan cheese
Method
Preheat the oven to 400°F with a rack in the middle position. Prepare a rimmed sheet pan with foil.
Bring a large pot of salted water to a boil over high heat. Cook the pasta until al dente according to the package directions. When the pasta has 1 minute left, add the green beans to the pot. Cook until tender, about 1-2 minutes. Drain the green beans and pasta and transfer back to the pot.
Meanwhile sprinkle the salmon all over with the salt and cook in the oven until it easily flakes with a fork. Remove from the oven and flake into bite size pieces.
In a large bowl toss the pasta, green beans, salmon with the pesto and lemon zest.
Divide into bowls and sprinkle with Parmesan cheese and serve.
