Roasted Red Peppers

Ingredients
- 3 medium red bell peppers, halved and seeded
- 2 tablespoons extra-virgin olive oil
- 2 ounces thinly sliced prosciutto, torn into bite-sized pieces
- 4 ounces burrata cheese, torn into bite-sized pieces
For serving
- Fresh flat-leaf parsley leaves
- Flaky salt
- Freshly cracked black pepper
- Crackers or crusty bread, optional
Method
Turn the oven broiler to HIGH with a rack in the center position. Line a rimmed sheet pan with foil.
Arrange the peppers, cut side down, on the prepared sheet pan. Brush the peppers with 1 tablespoon of the olive oil. Broil, until the tops of the peppers are completely charred, 8-10 minutes. Remove from the oven and let cool, 5 minutes.
Once cooled, peel away the charred skins from the bell peppers and discard. Slice the peppers into thin strips and arrange on a plate.
Top the peppers with the prosciutto and burrata. Drizzle with the remaining 1 tablespoon olive oil. Sprinkle with desired amount of parsley, salt and pepper.
Serve with crackers or crusty bread alongside, if using.
