Roasted Carrots

Ingredients
- 2 pounds carrots, peeled, quartered and cut into 3 inch pieces
- ¼ cup extra-virgin olive oil
- 1 ½ teaspoons kosher salt
- ½ teaspoon freshly cracked black pepper
- 1 teaspoon garlic powder
- 2 tablespoons finely chopped flat leaf parsley
Method
Preheat the oven to 425°F. With a rack in the center position.
Spread carrots out on a large rimmed baking sheet. Drizzle with olive oil and season with salt, pepper and garlic powder. Toss to combine and spread carrots out into a single layer.
Bake in the oven until the carrots are golden and tender, about 15-20 minutes.
Toss with fresh parsley. Transfer the carrots to a serving platter and serve immediately.
