Roasted Broccoli Pesto

Ingredients
- 4 cups roughly chopped broccoli
- ½ teaspoon kosher salt
- 2 tablespoons extra-virgin olive oil, plus more as needed
- 4 cloves garlic, smashed
- ½ cup loosely packed basil leaves
- ½ cup freshly grated parmesan cheese
Method
Preheat the oven to 400°F with a rack in the center position.
Toss the broccoli on a rimmed sheet pan with the salt and the olive oil. Roast until browned and tender, about 30 minutes.
In the base of a food processor, combine the roasted broccolini, garlic, basil, and parmesan. Pulse until well-combined.
Note: If you prefer a thinner pesto, slowly pour in up to 2 more tablespoons of olive oil.
