Roasted Broccoli Pesto

Ingredients

  • 4 cups roughly chopped broccoli
  • ½ teaspoon kosher salt
  • 2 tablespoons extra-virgin olive oil, plus more as needed
  • 4 cloves garlic, smashed
  • ½ cup loosely packed basil leaves
  • ½ cup freshly grated parmesan cheese

Method

  1. Preheat the oven to 400°F with a rack in the center position.

  2. Toss the broccoli on a rimmed sheet pan with the salt and the olive oil. Roast until browned and tender, about 30 minutes.

  3. In the base of a food processor, combine the roasted broccolini, garlic, basil, and parmesan. Pulse until well-combined.


Note: If you prefer a thinner pesto, slowly pour in up to 2 more tablespoons of olive oil.
