Roasted Beets

Ingredients

  • 4 beets, trimmed, washed, 2 pounds
  • 2 tablespoons extra virgin olive oil
  • ½ teaspoon sea salt
  • 1 tablespoon white wine vinegar
  • 1 tablespoon chopped fresh herbs (we like thyme, basil, mint, tarragon or chives)
  • Freshly cracked black pepper, for serving

Method

  1. Preheat the oven to 400°F with a rack in the center position.

  2. Using a vegetable peeler or a paring knife, peel the beets. Cut the beets into 1-inch wedges or 1-inch pieces.

  3. In a large bowl, toss the beets together with the oil and salt. Spread the beets out onto a large rimmed baking sheet and roast them in the oven until tender, about 35-40 minutes.

  4. Drizzle the roasted beets with the vinegar, herbs and pepper, toss to combine.

  5. Serve warm or at room temperature.
