Roasted Beets

roasted beets tossed with olive oil & salt, roasted until tender then tossed with vinegar, herbs & pepper for serving

Ingredients

  • 4 beets, trimmed, washed, 2 pounds
  • 2 tablespoons extra virgin olive oil
  • ½ teaspoon sea salt
  • 1 tablespoon white wine vinegar
  • 1 tablespoon chopped fresh herbs (we like thyme, basil, mint, tarragon or chives)
  • Freshly cracked black pepper, for serving
