Ingredients

  • ½ red cabbage, finely shaved
  • 2 granny smith apples, cut into matchsticks
  • ½ red onion, very thinly sliced
  • 1 cup loosely packed cilantro, roughly chopped
  • ½ cup loosely packed mint leaves, roughly chopped
  • 1 jalapeño, seeded and finely chopped
  • 1 teaspoon lime zest (from 1 lime)
  • 1½ teaspoons lime juice (from 1 lime), plus more to taste
  • ¼ cup mayonnaise
  • Kosher salt, to taste
  • Freshly cracked black pepper, to taste

Method

  1. In a large bowl, combine the cabbage, apples, onion, cilantro, mint, jalapeño, lime zest lime juice, mayonnaise, salt, and pepper.

  2. Cover and place in the refrigerator for at least 30 minutes before serving.
