Method
Preheat the oven to 350°F with a rack in the center position. Spray a 9 x 13-inch baking dish with cooking spray.
Keeping the set of Hawaiian rolls intact, slice horizontally, separating the tops from the bottoms. Place the bottom layer into the prepared baking dish, cut sides up.
In a medium bowl, combine the mozzarella, Parmesan, red pepper flakes (if using), ¾ teaspoon of the oregano, and ¾ teaspoon of the basil. Spread half of the pizza sauce over the bottom layer of rolls and sprinkle all over with half of the cheese mixture. Layer the pepperoni over the cheese, then top with the remaining cheese mixture. Cover with the tops of the Hawaiian rolls with foil and bake for 15 minutes.
Meanwhile, in a small bowl combine the butter, garlic, the remaining ½ teaspoon of the oregano, and the remaining ½ teaspoon of the basilI. Remove the sliders from the oven and discard the foil. Brush the tops with the butter mixture. Return to the oven, uncovered, and bake until the rolls are lightly browned and the cheese is melted, about 10 minutes more.
Meanwhile, in a small saucepan, heat the remaining sauce over low heat until warmed through.
Serve the pizza sliders warm, sprinkled with additional parmesan cheese if desired. Serve the warmed sauce alongside.
