Piña Colada

Homemade piña colada served in a tiki glass, topped with a slice of pineapple and pineapple leaves for garnish.

Ingredients

  • 3 cups diced frozen pineapple
  • 2 cups crushed or cubed ice
  • 3 ounces canned cream of coconut, (we like Coco Lopez brand)
  • 2 ounces pineapple juice
  • 1 ½ ounces freshly squeezed lime juice, (from 2-3 limes)
  • 4 ounces light rum
  • 2 ounces dark rum, (optional)
  • 4 dashes Angostura bitters, (optional)
  • Pineapple wedges, for serving

Method

  1. To a blender, add the pineapple, ice, cream of coconut, pineapple juice, lime juice, and light rum. Add the dark rum, and bitters, if using. Starting on LOW, blend for 10 seconds. Slowly increase to HIGH and blend until smooth, 3-5 minutes more. 
  2. Divide the drink into 4 cups. Top each with a fresh pineapple wedge.

Notes

For a virgin Piña Colada: 

  1. To a blender, add just 2 cups diced frozen pineapple, ice, cream of coconut, 4 ounces pineapple juice and 2 ounces of lime juice. Starting on LOW, blend for 10 seconds. Slowly increase to HIGH and blend until smooth, 3-5 minutes more.
  2. Divide the drink into 4 cups. Top each with a fresh pineapple wedge.
