Pesto Zoodle Salad

Ingredients
- 6 medium zucchini, spiralized into noodles, about 6 cups
- 1 cup basil pesto, homemade or store bought
- 8 ounces fresh mozzarella balls (like Ciliegine), halved
- 1 pint cherry tomatoes, halved
- 2 cups Shredded Chicken
- ΒΌ cup toasted pine nuts (optional)
Method
In a large bowl, toss the zucchini noodles together with the pesto.
Top with mozzarella, tomatoes, shredded chicken, and toasted pine nuts, if using.
