Pesto Zoodle Salad

Ingredients

  • 6 medium zucchini, spiralized into noodles, about 6 cups
  • 1 cup basil pesto, homemade or store bought
  • 8 ounces fresh mozzarella balls (like Ciliegine), halved
  • 1 pint cherry tomatoes, halved
  • 2 cups Shredded Chicken
  • ΒΌ cup toasted pine nuts (optional)

Method

  1. In a large bowl, toss the zucchini noodles together with the pesto.

  2. Top with mozzarella, tomatoes, shredded chicken, and toasted pine nuts, if using.
