Peanut Sauce-Marinated Chicken Skewers

- Serves: 8
- Prep Time: 10 min
- Cook Time: 20 min
Ingredients
- 3 lbs boneless skinless chicken thighs, cut into 1 inch pieces
- ½ cup creamy natural peanut butter
- 6 garlic cloves, minced
- 2 tbsp soy sauce (or tamari)
- 2 tbsp toasted sesame oil
- 1 tbsp white vinegar
- 4 green onions, minced, divided
- ¼ cup cilantro, minced (plus extra for serving)
- 2 tsp ground ginger
- 1 tsp salt
- ½ cup peanuts, crushed for serving
- Red pepper flakes, optional
- Twelve metal skewers
Method
- In a bowl mix together the peanut butter, garlic, soy sauce, sesame oil, white vinegar, half of the green onions (reserve the rest for a garnish), cilantro, ground ginger and salt.
- Add chicken to the peanut sauce, toss well until all the pieces are evenly coated. Not necessary, but this chicken is best if allowed to marinate for at least 1 hour or over night.
- Heat oven to 400° F. Place a cooling rack on top of a rimmed baking sheet. Spray or brush the cooling rack with oil to prevent sticking. Thread the chicken onto metal skewers or wooden skewers that have been thoroughly soaked in water to prevent burning. Bake chicken for 20 minutes or until the internal temperature reaches 165°F.
**This recipe is also great grilled over medium high heat.
