Pea and Prosciutto Pizza

Ingredients
White Pizza Sauce
- 1 tablespoon unsalted butter
- 1 tablespoon all-purpose flour, plus more for pizza dough
- ½ cup whole milk
- 2 garlic cloves, minced
- ¼ teaspoon sea salt
- ¼ teaspoon freshly cracked black pepper
- ¼ cup freshly grated Parmesan cheese, plus more for serving
Pizza
- ¾ pound store-bought or homemade pizza dough, room temperature
- ¼ cup frozen peas, thawed
- 3 ounces prosciutto, thinly sliced, torn into pieces
- 2 ounces goat cheese, crumbled (about ½ cup)
- 1 handful pea shoots or arugula (optional)
Method
In a medium saucepan, melt the butter over medium-low heat. Sprinkle the flour over melted butter and whisk until combined. When the sauce starts to bubble and smell slightly nutty, slowly whisk in the milk. Add in the garlic, salt, and pepper and continue whisking over medium-low heat until the sauce thickens enough to coat the back of a spoon. Stir in the Parmesan and remove from heat.
Preheat the oven to 450°F with a rack in the center position.
Line a large sheet pan with parchment paper or prepare a pizza stone by placing it in the oven. On a lightly floured surface, stretch or roll the dough into a circle about 12-inch in diameter, roughly ½-inch thick. Transfer the dough to the prepared baking sheet or preheated pizza stone.
Spoon the sauce onto dough and spread into an even layer, leaving 1-inch of crust exposed around the edges. Top evenly with peas, prosciutto, and goat cheese.
Place the pizza in the oven until the edges are golden brown and the center of the crust is cooked through, about 12-15 minutes.
Remove from the oven, sprinkle with extra Parmesan and pea shoots or arugula, if using. Cut into 8 pieces, serve warm.
