Oat Scones

Ingredients

  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon kosher salt
  • ½ cup sugar
  • ½ cup (1 stick) cold salted butter
  • ⅓ cup vanilla yogurt, plus more for brushing (or flavor of you choosing)
  • 1 cup quick oats

Method

  1. Preheat the oven to 375°F with a rack in the center position. Line a sheet pan with parchment paper.
  2. In a medium bowl, combine the flour, baking powder, baking soda, salt, and sugar until well combined. 
  3. Using a fork or pastry cutter, cut the butter into the dry ingredients until the mixture resembles small pebbles. Add the yogurt and mix until well combined. Using your hands, mix in the oats until evenly distributed. 
  4. Turn the dough out onto the prepared sheet pan. Using your hands, shape the dough into a ¾-inch-thick disk. Cut into 8 equal wedges. Spread the wedges out on the sheet pan. Using a pastry brush, brush the tops with a little more yogurt.
  5. Bake for 15 minutes or until the edges are golden brown. Cool slightly before serving.
