Nutty Carrot Dip

Ingredients

  • 1 cup pecans
  • 3 cups grated carrots, about 4 medium
  • 1 (8 ounce) package cream cheese
  • ¼ cup mayonnaise
  • 1 Tbsp ranch seasoning powder (from ranch seasoning packet)
  • 1/2 tsp garlic powder
  • 1/2 tsp cayenne pepper

Method

  1. In the base of a food processor add the pecans and pulse 6 times until roughly chopped.
  2. Add the grated carrots (you can also use your food processor for this step), cream cheese, mayonnaise, ranch seasoning, garlic powder and cayenne. Pulse or blend until completely combined but not fully smooth, about 45 seconds.
  3. Cover and refrigerate until ready to serve, alongside vegetables or crackers.
