Mom’s Tomato & Olive Salsa

Ingredients

  • 1 (2.25-ounce) can chopped black olives
  • 5 Roma tomatoes, diced
  • 3 green onions, finely chopped
  • 1 (4-ounce) can diced green chiles
  • 3 tablespoons neutral oil, such as avocado or vegetable
  • 3 tablespoons white vinegar
  • ¾ teaspoon kosher salt
  • ½ teaspoon freshly cracked black pepper
  • ½ teaspoon garlic powder
  • Corn tortilla chips, for serving

Method

  1. In a medium bowl, combine the olives, tomatoes, green onions, chiles, oil, vinegar, salt, pepper, and garlic powder. Let sit for 15 minutes, then taste and adjust seasoning. 
  2. Serve with tortilla chips for dipping.
