Mediterranean Wedge Salad

Ingredients
- pickled red onions
Creamy Feta Dressing
- 5 ounces crumbled feta
- ¼ cup heavy cream
- 1 tablespoon fresh lemon juice (from 1 lemon)
- 2 tablespoons minced chives
- 1 garlic clove, minced
- 1 teaspoon minced dill
- ½ cup sour cream
- 2 tablespoons Champagne vinegar
- ½ teaspoon sea salt
- ½ teaspoon freshly cracked black pepper
Wedge Salad
- 1 head iceberg lettuce, cut into wedges
- 1 cup cherry tomatoes, halved
- 1 cup Greek olives, pitted
- 2 ounces crumbled feta
- 1 cup diced cucumber
- Pickled Red Onions
- Freshly cracked black pepper
Method
Make the dressing. In a blender or food processor, combine the feta, cream, lemon juice, chives, garlic, dill, sour cream, vinegar, salt, and pepper and blend until smooth.
Make the Salad. Place the lettuce wedges on a platter or divide between four plates. Drizzle with the creamy feta dressing, then top with the tomatoes, olives, feta, cucumbers, pickled onions, and pepper.
