Marinated Olives and Cheese

Ingredients

  • 5 ounces green olives, (we like Castelvetrano or Frescatrano)
  • 3 ounces flavorful aged cheese, like Gruyère, Emmental or manchego, cut into ½-inch cubes
  • 3 garlic cloves, smashed
  • 3 large strips of orange peel, (from 1 orange)
  • 2 fresh rosemary sprigs
  • 5 whole black peppercorns
  • 1 small dried chili
  • Extra-virgin olive oil

Method

  1. In a medium bowl, combine the olives, cheese, garlic cloves, orange peels, rosemary, peppercorns, and chili.
  2. Add just enough olive oil to cover the ingredients. Cover and let marinate, refrigerated for about 24 hours.
  3. Store refrigerated in an airtight container for up to 1 week.
  4. Let the marinated olives and cheese come to room temperature before serving.
