Low-Carb Bacon Burger with Guacamole

2 Low Carb Bacon Burger With Jalapeño Mayonaise in a small bowl

Ingredients

  • 9 pieces bacon, cooked
  • 2 pounds 80/20 ground beef
  • 1 teaspoon sea salt
  • ½ teaspoon freshly cracked black pepper
  • 1 teaspoon garlic powder ​​
  • 1 teaspoon onion powder

Jalapeño Aioli

  • 1 cup mayonnaise
  • 1 jalapeño, seeded and roughly chopped
  • 1 tablespoon lime juice (from 1 lime)
  • 1 garlic clove, smashed
  • ¼ cup cilantro leaves

For Serving

  • 12 iceberg lettuce, leaves, plus more if needed
  • 1½ cups shredded red cabbage
  • 1½ cups guacamole, homemade or store bought

Method

  1. Roughly chop 3 pieces of the bacon, set aside the remaining 6 pieces bacon. In a large bowl, combine the chopped bacon, beef, salt, pepper, garlic powder, and onion powder. Form into 6 ¾-inch-thick patties, about 5 inches in diameter.

  2. Heat the grill on high and brush the grates with the oil (see Note). Place the patties on the grill and cook until slightly charred and the internal temperature reaches 150°F on an instant read thermometer, 4 to 5 minutes per side.

  3. Meanwhile, make the jalapeño aioli. To a blender or food processor, add the mayonnaise, jalapeño, lime juice, garlic, and cilantro, blend until smooth.

  4. To serve, layer 2 lettuce leaves, slightly overlapping onto 6 plates. Top each with 1 beef patty, ¼ cup shredded cabbage, ¼ cup guacamole, and 1½ pieces bacon. Drizzle with the jalapeño aioli. Carefully fold in the lettuce leaves to make a wrap, using a few more leaves as necessary.


Note: A grill pan is a great indoor alternative to a grill. Use it over high heat on your stovetop—just note that it won’t take quite as long to heat up as the grill. Brush it with some olive oil to avoid sticking.
