How To Roast Mushrooms

Ingredients
- 1 ½ pounds cremini mushrooms, trimmed, quartered
- 4 tablespoons extra-virgin olive oil
- 1 ½ teaspoons kosher salt
- 4 cloves garlic, minced
- 2 teaspoons fresh thyme
- ¼ cup flat leaf parsley, finely chopped
- Freshly cracked black pepper
Method
Preheat the oven to 450°F.
Place the mushrooms on a rimmed sheet pan. Drizzle with olive oil and sprinkle with salt and pepper. Toss to coat.
Spread the mushrooms out in a single layer and bake for 10 minutes. Remove from the oven, add the garlic and thyme and toss to combine. Place back in the oven and continue to cook until the mushrooms are caramelized and soft, about 10 more minutes.
Remove from the oven and toss with parsley before serving.
