How to Make Almond Milk

Ingredients

  • 1 cup raw almonds, soaked (see Note)
  • 4 cups filtered water
  • ¼ teaspoon sea salt
  • 2 to 4 whole, pitted dates, optional
  • 1 teaspoon vanilla extract, optional
  • ½ teaspoon cinnamon, optional

Method

  1. Drain and rinse the soaked almonds, discarding the soaking water. Add them to a high-speed blender along with the filtered water, salt, dates, vanilla, and cinnamon, if using. Blend on high until creamy, smooth, and foamy, 1 to 2 minutes.  
  2. Using a nut bag or a clean tea towel draped over a large bowl, strain the almond milk. If using the towel, gather the fabric around the pulp and gently squeeze until all of the liquid is extracted. 
  3. Transfer the milk to a jar with a tight-fitting lid. Store refrigerated for up to 4 days. Shake well before drinking. 

Notes

Soak the almonds for 8 to 12 hours in cool water or overnight. For thinner milk, use 5 cups of water instead of 4. For sweeter milk, use 4 dates. For subtle sweetness, use 2 to 3 dates.
